DMNate's Pirate Ship Build
Sketch out the size of your deck on graph paper (or whatever paper you'd like, I guess). Next, sketch out the base layer (even if you're not making it playable.) Sketch out any other decks you'd like to add. Next, Cut it in half, and use a reversed image of the same curve to mark out your decks in the foam board. Cut them all out. Make sure you cut out and trace the upper decks first. Cut out your decks Cut out small curves that match in height, and have mirror images of themselves and glue the decks together. If this part intimidates you, keep reading. The rest will be shown on a small canoe, which is easier to see. Next, cut out strips of 1/4 inch (or about 2/3 cm) foam board. Start gluing the strip down along the base of your ship. Keep gluing it all the way around. If you run out before the end, just keep going with a new strip. Cut the excess off and connect with where you started. Continue to layer strips. Next, cut flat the end and cut a strip of foamboard to glue onto the front. Sand down the edges. This is one step I wish I would've spent more time on when doing my ship. The stairs are just pieces of foam board glued to each other. It took less time than you'd think. The smaller boat only took me about a half hour, and the pirate ship took me about 1.5 hrs. Painting it took as much time as anything.

I can assure you, that technique is faster than making a paper craft model like I did, however, are you also factoring in the painting time for those ships? Anyway, really cool, and the design is kind of fantastical, which is great

Nah. Painting took about an hour extra on the pirate ship, but that could vary depending on the faux wood technique you use. If you are only using the ship for one or two encounters, this method is probably not worth it, but if you plan on using it throughout the whole campaign, this method makes one decent looking ship. I'm working on a modular ship set. More to follow.
