One of my/our playgroup is stuck working every second Sunday, so can't make the weekly adventure.
His character is a goblin merchant, so a 'market stall' so they have a legit IC reason for not being there/a way for his goblin to level with the party. His character's absence explained as he's "running the stall".
I want to agree to this, and allow the players to get a bonus on their gold in exchange for waiting a week ooc. (the goblin sells the loot/curios, and gets more profit then just selling it to another 'antiques/relic vendor') but I want to learn to make an entire outdoor marketplace / a bunch of market-stalls that can be rearranged for each town/day.
I can then allow players to shop by going stall-to-stall, overhear rumors in the market, and even allow for encounters/ambushes in the market place!
How do I make market-stalls?

Ooh...good Q. I imagine you could start with a desk (popsicle sticks glued together in a desk like shape), match sticks to make posts, then drape some TP or paper towel over the top...glue ala camp tent totorial...you should be good.
Then again, why doesn't he invest in a merchant wagon? Mobile, storage capacity, and can serve as a transport, room and board...

Have you thought about reducing gameplay to every other week? If your other players are still eager, you could do boardgames on the off-nights. Plus, it gives you, the DM, more time to prepare between sessions (so the game nights can run longer that way, too).

Funny you say that Slurpy, I considered the cutting back to once a fortnight, because another member is working on the other Sunday. She plays a Druid so the group decided to say that she was 'Communing with the Ancestral Spirits'. Now with another player off on the other Sunday, It's closed off that option. I rarely need much in the way of preparation time anyway, because we are running 0e/Swords and Wizardry, and I've made the scenarios / encounters for the Town / City ahead of time, so if the Party wants to go to the Brothel/ the Tavern/ the Docks/ City Hall/ Boutiques/ Arena/ etc I have the props and NPCs made up ahead of time. onethatwas, the Mobile Cart sounds like a great Idea! Even better if a frame with a "Sack of Holding" is opened, and the cart is simply 'wheeled out!' (I have actually had adventurers use their sack of holding as a sleeping-bag, a loot repository, and a means to carry ridiculous amounts of provisions. But the normal-style market-stalls are still needed for the poorer merchants, so I'd like a step-by step, as well as ideas on how to make different vendors (fruit/veg, butcher, fish, weapon/armor, curio/junk, etc.)

I use Crayola Model Magic to make veggies and fruits, along with cuts of meat.I haven't made fish yet but it's probably not hard. You could use extra bits for weapons vendors.

Someone made some market stalls a while back that looked really cool, but I can't remember who. Maybe they'll see this and post a pic.

One of the tricks I have used is to make PCs disappear and reappear magically, depending on whether the player is present or not. The PCs disappear in a cloud of smoke, and reappear with no memories of what happened, except that everything "tastes purple" and occasionally some weird feathers return with them (it's now colloquially known as "the chicken dimension"). They don't know what's going on yet, but the BEBG wizard is experimenting with portable holes and is tearing the fabric of reality apart, hence the magical disappearance/reappearance of PCs and NPCs (and the PCs reappear with the party because they're unknowingly carrying an artifact linked to these experiments). Of course, once the campaign runs its course, that will no longer be a viable option, but everyone writes themselves into a corner once in a while.

Why not rewrite the back story to make this more universal? That way you can get more mileage out of the awesome idea...perhaps the Wizard "thinks" he is running an experiment, when in reality he has unknowingly unleashed an ancient god of Chaos and Improbability (Not necessarily evil, but his random energies tend to cause way too much Havoc). That way you could broaden the scope of the situation, and at the end of the day this God might be bargained with to alleviate Cosmic tension caused by his power...but he still likes to pull a prank every now and again on thr PC's. Just spitballing and tossing out ideas.

I did some easy to make market stands a while back for a village goblin attack. Market stands are made of cardboard, with DM Scottys tent technique using towel paper. Popsicle sticks might have looked better for the woody parts, but I was in a hurry and had cardboard lying around... I decided to skip actual table part of the stands to make it easier to place goblins distracted by food under the stands. This worked well, players forgot about one goblin who later ran off with his pockets full of smoked Salmon

A quick and dirty method, using tongue depressors and toothpicks. Measure everything to scale using a mini, this will help. make the 'box' that the salesperson will sit in: I used hot glue, but pva or other might work better. I then added the struts using toothpicks: Trim the top and make a pallet using the depressors for the 'canvas shade' skeleton: I realize this is off center and wonky. I was goofing off instead of paying attention, such is the life, no? Then I made the carboard canvas for the shade, bent the end and cut the frill into it. Glue that puppy on! The make a base, it's a bit front heavy. Paint as you see fit, I suggest colors that evoke the shop. Here is the finished but not painted result. In the future, I wouldn't glue the shade. Let it be removable so the npcs can 'visit' the shop. There are so many ways to do the stalls, I just presented a lazy one. Ha! Hope it helps or inspires.

slurpy, gallant, uncledog, it's a shame I can't Exhalt more then once every 15 minutes, you both deserve so many exhalts for those tutorials!
I have a shitload of cardboard on hand, so I'll draw up some templates, and use slurpy's Idea to craft the wares.

while all those stalls are impressive, not every stall needs to have a table and an awning. just a simple blanket on the ground with a few wares displayed would be a good filler and easy to make.
